HI everyone! The Valentines are bringing another video for Snap Post Vlog and we wanted to share with you 5 things that we miss about being in an apartment. Granted, we had to stretch for some things but they are there!

Recipe Exploration: Crocker Family Macaroni and Cheese
Name: Crocker Macaroni and Cheese

Prep Time: 20 min
Cook Time: 35 to 40 min
Servings: 4 to 5
Ingredients:
- 1 ½ cups of elbow macaroni
- ¼ box of Velveeta (2 lb box)
- 4 oz mild cheddar
- 1 ½ cup milk
- 2 tablespoons margarine or butter
- 1 large egg
- ½ teaspoon of salt
- 1 teaspoon pepper
Directions:
- Preheat oven to 400° Fahrenheit.
- Prepare elbow macaroni according to package directions in salted water. Drain.
- In a glass baking dish, combine prepared elbow macaroni, Velveeta, and cheddar cheese.
- Beat egg in a small bowl and add to elbow macaroni.
- Add the salt and pepper and stir thoroughly. It will be a little watery.
- Bake at 400° 35 to 40 minutes or until brown.
Notes:
- This is a great family dish so make sure to double the recipe for family!
- For some extra spice, add red pepper flakes
- For extra cheese, you can add some on top ten minutes before baking until it melts.

Recipe Exploration: Vegetable Parmesan Penne
Name: Vegetable Parmesan Penne

Ingredients:
- 1 pound penne pasta
- 2 tablespoons olive oil
- 1/2 pound asparagus, trimmed and cut into 1 inch pieces
- 1 cup fresh broccoli florets
- 1 cup chopped red bell pepper
- 1 cup chopped zucchini
- ½ cup of chopped squash
- ½ onion, chopped
- salt
- pepper
- 3/4 cup butter
- 2 tablespoons minced garlic
- 1 cups sun-dried tomatoes, packed in oil chopped
- 3 ounces grated Parmesan cheese
Directions:
- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss with olive oil.
- In a large skillet over medium-high heat, roast asparagus, broccoli, bell pepper, zucchini, squash, and onion until flecked with dark brown. Set aside.
- In a large skillet over medium heat, melt butter. Saute garlic and sun-dried tomatoes until heated through. Toss with penne, roasted vegetables and Parmesan. Place in a 9×13 inch baking dish.
- Bake in preheated oven 30 to 40 minutes, until hot.
Notes:
- Good idea to use a stir fry mix to save on time and money. Be careful using frozen. Fresh seems to work best with this recipe
- This would be excellent with chicken, shrimp or bacon if you are feeling meaty
- You can add in oil from sun dried tomatoes for extra flavor
Recipe Exploration: Spicy Black Bean Burgers
Name: Spicy Black Bean Burgers

Ingredients:
- 1 can (16 Oz. Size) Black Beans
- ½ whole Onion, Cut Into Wedges
- 3 cloves Garlic, Peeled And Rough Chopped
- 1 whole Red Pepper, Stem And Seeds Removed, Chopped
- 1 whole Egg
- 1 teaspoon Cumin
- 1 teaspoon Onion Powder
- 1 teaspoon Chili Powder
- ½ tsp red pepper flakes
- 1 Tablespoon Sriracha Hot Sauce (or Your Favorite Hot Sauce)
- ½ cups Finely Chopped Cilantro
- 1 cup Panko Bread Crumbs
- 2 Tablespoons Canola Oil
- 4 whole Burger Buns Or Kaiser Rolls
Directions:
- Drain the can of black beans. In a mixing bowl, mash the black beans with a fork or a potato masher.
- Use a food processor to chop the onion, garlic, and red pepper until very fine. Stir the mixture in with the beans.
- In a separate mixing bowl, combine the egg, cumin, onion powder, chili powder, Sriracha and cilantro. Add this to the bean mixture and combine well.
- If the mixture has a lot of liquid, strain with a cheesecloth or let it strain through a colander with very fine holes. Once the excess liquid has drained off, return the bean mixture to the bowl and stir in half of the bread crumbs.
- Use your hands to form four evenly sized patties. Coat the outside of the burger patties in the remaining bread crumbs.
- Heat the oil in a skillet on medium high heat. Cook burgers in the pan until heated through and slightly browned on both sides.
- Put the burger on top of a bun. Dress with all your favorite burger condiments and enjoy!

Recipe Exploration: Strumpet’s Super Simple Pasta Salad
Name: Strumpet’s Super Simple Pasta Salad

Ingredients:
- 1 package pasta (bowtie was used)
- 1 lb. spicy Italian sausage
- 1 cup fresh mushrooms, diced
- 1 red pepper, sliced
- 1 lemon (or lemon juice equivalent)
- 1 package baby mixed greens – whichever kind you like best
- 1 clove garlic
- ¼ cup extra virgin olive oil (can use flavored if you like)
- ½ cup to a cup parmesan (shaved or grated)
- ½ cup feta cheese
Directions:
- Boil the pasta according to the package directions.
- While waiting for the pasta water to boil, brown the sausage. Add in the mushrooms and peppers and saute until mushrooms are tender.
- Toss sausage mixture in with the salad.
- Squeeze the juice of the lemon out of the lemon
- Chop (mince) garlic and mix with the lemon juice and oil.
- Drain pasta and toss in salad. Add lemon dressing and toss again.
- Add parmesan toss a final time. Sprinkle with feta.
Notes:
- If all of it isn’t gone that night, this will serve as a cold salad the next day.
- It’s good with fresh cracked black pepper.
Recipe Exploration: Mexican Chicken Casserole
Name: Mexican Chicken Casserole

Servings: 8
Ingredients:
- 4 teaspoons olive oil
- 2 cups fresh sliced mushrooms
- 6 tablespoons sour cream
- 2 cups shredded Mexican Blend cheese
- 4 oz can of chopped green chiles
- 1 package of taco seasoning
- 2 teaspoons Salt
- 1 teaspoon Pepper
- ½ teaspoon Cayenne Pepper
- 2 teaspoons cumin
- 15 oz can of black beans
- 1 (16 ounce) jar salsa
- 2 cups cooked white rice
- 8 ounces boneless chicken breast halves, cooked and diced
Directions:
- In a skillet, heat oil over medium heat. Saute mushrooms until soft.
- Combine mushrooms, sour cream, 1 cup of cheese, green chiles, taco seasoning, salt, pepper, cayenne pepper, cumin, black beans, salsa, rice, and chicken. Place in a greased 9X13 casserole dish.
- Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes.
- Sprinkle remaining cheese on top of casserole and bake until melted.
